-1 cup Almonds
-¼ inch vanilla bean, split lengthwise
-1½ cups coconut milk
⅛ cup raw honey
First, make the almond milk by blending the almonds, dates, and scraped seeds from the vanilla bean with 2 cups of water until smooth. Strain the mixture through a sieve and set aside.
In a medium bowl, mix the coconut cream with 1 cup of almond milk, sea salt, and raw honey until combined.
Freeze for 2 hours, blend it in mixer, top with raisins and freeze again until set. Drizzle raw honey before eating if desired.
This recipe is a healthy dessert which can be made easily. Coconut and almond milk are good alternatives to dairy. Also, raw, organic honey, dates and raisins are natural sweeteners which impart sugary sweetness and are nutrient-rich.
