Kothimbir Vadi

Ingredients

Coriander/Cilantro:             2 1/2 cups finely chopped

Green chillies:                        1 finely chopped (add more if you like it hot)

Garlic:                                       1 clove grated finely

Chickpea flour (Besan):       1 cup

Salt:                                            to taste

Method    

Mix all the ingredients together add a little water to make a thick batter. Pour this batter in a flat plate and steam it in a pressure cooker for 15 to 20 mins (remember to add enough water in the pressure cooker and remove the whistle).

Insert a knife in the middle if it comes out clean then the batter is cooked otherwise steam for a couple of more minutes.

Allow it to cool the cut into squares. If you want a crisper version, bake on a parchment covered baking tray at 350F/ 180C for 10 mins.

Chickpea flour is a great source of plant based protein and rich in minerals too. Combined with cilantro, this is a great high protein savory snack for cold evenings with a nice hot cup of a herbal tea.
